Peel (please see my youtube video below), and cut pineapple into small pieces. Add half of the cut pineapples (approximately 5 cups) to a blender.
Peel, wash and roughly chop the ginger root, then add it to the blender.
If you'd like to make a 'sugar-free' Pineapple Ginger Drink Recipe, add the chopped Fuji apples to the blender.
Next, add half of the water to the blender.
Blend on high for approximately 15 seconds (stopping every 5 seconds), or until the pieces of pineapples are blended smooth.
Strain the juice into a large bowl. Using a large spoon, stir and press the mixture through the strainer until only dry fibrous pineapple pieces remain. Discard the dry pulp.
Repeat the process of blending and straining until you have juiced all of the pineapple.
Add the lemon juice and a sweetener of choice then stir thoroughly. Omit the sweetener if apples were added earlier.
Taste the mixture to determine whether it needs more sweetener or water. If so, add a little more of the required ingredient at a time, until you get the desired taste.
Finally, pour your Pineapple Ginger Juice Drink into a sealed container and refrigerate. This recipe makes about 7 cups and can last up to 3 days when refrigerated.
